Nutritionists believe the spores of mushrooms to be very nutritious, hence when preparing organic mushrooms; do not soak them as this will remove much of the spores. Instead, just rinse them under running water.

Ramen Beef and Broccoli

Beef sirloin steak is paired with ramen noodles and lots of vegetables in this quick and easy stir fry entree recipe.

INGREDIENTS:

  • 1 lb. boneless beef sirloin steak
  • 1 Tbsp. soy sauce
  • 1 Tbsp. apple juice
  • 2 tsp. cornstarch
  • 2 pkgs. beef flavored ramen noodles
  • 4 cups boiling water
  • 2 Tbsp. olive oil
  • 1 onion, chopped
  • 3 cups frozen broccoli florets, thawed and drained
  • 3 Tbsp. oyster sauce
  • 1 Tbsp. cornstarch

PREPARATION:

Partially freeze beef and slice into thin strips. In a medium bowl, combine soy sauce, apple juice and 2 tsp. cornstarch and stir to blend. Add sliced beef, stir, and set aside.

Discard one of the seasoning packets.

Break ramen noodles into pieces and place in large bowl, sprinkle with contents of one of the seasoning packets and cover with 4 cups boiling water. Stir and set aside.

Heat oil in a large skillet or wok over medium high heat. Add onion and stir fry until crisp tender, 2-4 minutes. Add broccoli and stir-fry until crisp tender, 3-5 minutes. Then add beef mixture and stir-fry until beef is cooked.

In a small bowl, combine 1 cup of the noodle soaking liquid, the oyster sauce, and 1 Tbsp. cornstarch. Drain the ramen noodles, discarding remaining soaking liquid. Add the oyster sauce liquid to the skillet and bring to a boil. Add the drained ramen noodles. Cook and stir until the mixture is thickened and heated through. 4-6 servings.

Health Tips:

Broccoli is packed with antioxidants. These antioxidants help prevent and fight cancer, namely breast, prostate, lung and colon cancer. Broccoli is also rich in calcium, which helps prevent osteoporosis, and contains a high amount of cholesterol removing fibre. However, it is useful to note that heavy cooking destroys some of the antioxidants in broccoli, hence take note to not overcook your broccoli!

Asian Beef and Ramen Noodles

Beef is easier to slice thinly if it is partially frozen. Freeze the beef for 30 minutes before slicing.

INGREDIENTS:

  • 2 Tbsp. oil
  • 1 lb. beef top sirloin, thinly sliced
  • 2 (3 oz.) pkgs. Oriental flavor instant ramen noodles
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups frozen broccoli and carrots, thawed and drained
  • 1 red bell pepper, sliced
  • 2 cups water
  • 1/2 tsp. ground ginger
  • 2 cups snow pea pods

PREPARATION:

Discard one seasoning packet from the ramen noodles and break the noodles into pieces. Heat oil in a nonstick skillet over medium heat. Add thinly sliced beef and cook and stir for 3 minutes. Remove the meat and toss with 1/2 of one seasoning packet from the noodles.

Add the onion, garlic, and the broccoli and carrots and saute until almost cooked, about 7 minutes, stirring frequently. Stir in the red bell pepper. Add water, ground ginger, noodles, rest of seasoning packet, and snow pea pods and stir. Bring to a boil.

Reduce the heat and simmer for 5 to 7 minutes, or until the noodles and vegetables are tender, stirring occasionally. Add the beef and stir to combine. Cook for 1 minute longer and serve. 4-6 servings.

Health Tips:

Bell peppers are excellent sources of Vitamin A and C. Vitamin A and C are powerful antioxidants which reduce the risks of both cardiovascular diseases and cancer. In this recipe, we specifically chose the red bell pepper, which is the riper version of the green one, as it contains the highest amount of Vitamin C and also has phytonutrients which are good for the eyesight.
